This feast is totally vegetarian

which really doesn't mean anything. You can still eat like an unhealthy pig and not kill animals.


There is lots of cheese, butter and eggs. I never said it was vegan.

Yesterday we had Ashley, Garrett and Blake's going away brunch. They are moving to Texas in about a week.  It was just our family because apparently, all sides of the family are not civilized enough to get along. Maybe Ashley just wanted to have an excuse to pig out three different times. I'm going with that.

She asked for "Christmas Brunch" as her going away party. In other words, she wanted all of her favorite dishes that I make for Christmas Brunch.

I just tweaked them to be vegetarian instead of meat based.

The fruit is of course vegetarian. It was a mix of fresh peaches, blueberries, kiwi and red grapes. The kids pretty much made that dish. They wanted peeled peaches so I handed them each a peeler and told them not to cut themselves because this is a vegetarian meal and we don't want any blood.

The dish Kat is admiring is Baked French Toast from Pioneer Woman.

In the middle is a Hash Brown casserole that should be renamed to Heart Attack Casserole. But, hey, it's vegetarian now so it's healthy for you, right?

I apologize because I can't source the recipe. If this is your recipe, let me know.

2 pounds-o-frozen hash browns (I use chopped potatoes, not shredded)
1/2 c chopped onion
2 c grated cheese
1 can condensed cheese and broccoli soup
1 pint sour cream
some heavy cream to help keep it moist

I like to defrost the hash browns first. I do it in the microwave. Also, because I mess with everything, I added red bell pepper, too.

Mix all that vegetarian stuff together and place it in a greased up 9x13 dish.

Add crushed up potato chips and a sliced up stick-o-butter to the top.

Bake it for 40-45 minutes at 350.

Next to that is the Ham-Cheese Oven Omelet, errrrr I mean the Red Pepper Cheese Oven Omelet

8 eggs, baby
1 c milk
1/2 tsp Season Salt (below)
1 red bell pepper cut into exactly 127 pieces
1 c grated cheese
3 T finely chopped onion

Beat eggs, milk and seasoned salt. Stir in remaining ingredients. Pour into greased dish like the size in the picture.

Bake it for 40-45 minutes at 325.

(of course you know I throw everything in at once at a temp of 350 and bake it for however long I feel like, until company gets here or until I decide it looks done. There is really no magic time for me. You know when eggs are done, right? Doesn't everyone?)

Here's the Seasoned Salt recipe. It makes the perfect excuse to go to IKEA and buy cute salt shakers to store it in.

1/2 c salt
1 T celery salt
1 T garlic salt
1 T paprika
! tsp dry mustard
1 tsp onion powder
1 tsp pepper

Place all ingredients in blender container. Wow. Lots of salt. I never realized that before. Cover and blend on high speed for 20 seconds (really? I've never done this part.)

Why does cooking have to involve so many stupid containers?  Screw it. Just stir it all up with a spoon and store it in your new and cute IKEA salt shakers.

Afterwards, serve cake and ice cream because that is vegetarian, too.

Boast to your company later that you made them eat vegetarian (haha) and they never even realized it.

Actually, maybe that is exactly why Ashley decided why all of her family couldn't get together in one room...because I am completely obnoxious.

Oh, and P.S. you really don't have to cut the red bell pepper into exactly 127 pieces. Just chop it up however you want.

These all look so yummy. We have hash brown casserole at Duff family functions and we lovingly refer to it as Heart Attack Potatoes!
Are you guys going vegetarian?
I'm so sad for you that Blake is going to Texas. I mean how dare Ashley and Garrett move and take their son with them, right?
We can both be really sad together starting next month, Kelly is due with my Bio-Grandbaby and I won't see her...maybe once/twice a year if lucky. I don't understand why Kelly is being this way. I'm good enough to be invited to her shower, but not good enough to be able to visit her and help her out with things. WHATEVA!

No, we're not going vegetarian. I just like to eliminate animals when I can. I would really like to be vegan but I don't think I have the willpower or the amount of recipes needed to do so.

I'm sorry about Kelly. :(

Why are Ashley and hubby going to Texas? I can never remember his name, sorry. I know you will miss your lil guy! He is such a cutie! We are coming to Tucson for a wedding in October. It is at a place called Sundance> It looks like a ranch and the reception is in an open barn like structure.
Hope I can come by and see you! Or we can go to lunch!
